"A tale of two bowls" If I were to judge this entirely on the tonkotsu bowl, it may have hit a low 8. However, I made the mistake of ordering the special on my first visit and that proved to be a mistake. Make no mistake, I am not a stranger to "heavy" ramen, having had Fukuoka-style bowls in Japan and eaten my way around plenty of fat-induced bowls the world over. However, the Bankara special lacked any of the deep fundamental flavours that a regular tonkotsu can get away with. It just felt like eating bars of butter-drenched in soup. On the second visit I opted for the tonkotsu and it was almost as good as the version in Bangkok. However, I feel the Bangkok branch of Bankara has just finessed the broth that little bit more to where it really is a pleasure to eat. As usual, the pork was succulent and the egg was nicely cooked, but a few more tips from their other branches might bring this one up to speed. These recommendations are just personal opinions based on my palate, things change, chefs get fired or replaced, places open-close, relocate, so take it all with a pinch of MSG and discover your own gems too. But please do try a few of these, they have been researched exhaustively.
