"The hunt to find Chiang Mai's best noodles" Perturbed at the notion that the 20-odd places I had on my list were slowly disappearing, I took it upon myself to head to Anchan based on the preponderance of good reviews. My Grab taxi driver was unconvinced. "Anchan... ok, ok.... not amazing but ok." I risked it. It was a sweltering day in the Northern city, sweat pouring down my back moments after stepping out of a cold cab. I found a table, turned my back to the public as I usually do, and ordered the crispy pork noodle plate. "You can handle spicy?", "Yes, yes I can." Objectively reporting, it was a tasty plate of food. Did it dazzle me? Did it make me break out in song? No... but this was probably tastier than anything you'll find in Europe or outside these borders. The pork held it's own fatty flavour, the skin perfectly crisp and brittle. The noodles were deceptively flavourful despite their odd tinge. My server was fast and attentive, the weather caused me to gulp at my food rather than savor it, for need of Air Conditioned relief. I paid my bill, decided to walk home, crossed paths with a dead Malaysian Pit Viper laying in the road, and thanked my lucky stars I didn't encounter it the night before under the cover of un-sight. These recommendations are just personal opinions based on my palate, things change, chefs get fired or replaced, places open-close, relocate, so take it all with a pinch of MSG and discover your own gems too. But please do try a few of these, they have been researched exhaustively.
