"Guides can summit Everest quicker than it takes to get food here" I'm not going to lie. I did ask the waiter how long the food would take, and considered cancelling. Full disclosure, I did arrive just after a group of 12 people, so I get the tedium in the kitchen. However, waiting almost an hour for a soup and some dumplings is excessive under any circumstances. Lucky for them that the food was solid. My Momo (A nepalese/tibetan dumpling) were crispy and flavourful, the sauce was tangy, spicy and above average for such extravagances. The thukpa had a serious amount of raw chilli in it, something I liked. Broth-wise it was hearty and well balanced, the noodles were overcooked but the main offender was the bullet hard pieces of chicken.
However, flavour trumps overall, and this tiny little hidden restaurant has that in spades. The fact the chefs apron boasts MSG might betray their umami-origins but I don't frankly care if the food tastes good.
