"Chicken Pho spot where legends slurp" I often get asked where my favourite Pho place is in Saigon, as I have spent so much time in the city. Admittedly, I only tried Beef Pho spots until today, so my advice was limited. After hearing from a wild array of worshippers about the lip shatteringly delicious chicken version done at Pho Ha, I made it a point to walk in the brazen sun to try a bowl in the shade. As the waiters balanced bowls serving long tables of local delights, my bowl of clear soup and dress white chicken arrived piping hot and ready for consumption. I tasted the broth neat at first, then added some lime and chilli as it needed some attention. Whilst I'd say everything was tasty, and I could understand the wild appeal from the local population, the chicken version of Pho just eats a little thin for my tastes. It lacks the deep fatty bone-unction that beef Pho bestows. Having said that, if you have a personal aversion to red meat and fancy a cleaner, brighter bowl, then you could do far worse than track down this soup bonanza and dine on their dusty sidewalk. These recommendations are just personal opinions based on my palate, things change, chefs get fired or replaced, places open-close, relocate, so take it all with a pinch of MSG and discover your own gems too. But please do try a few of these, they have been researched exhaustively.
